Baked Chicken and Rice Burrito Recipe
Ingredients
- 2 cups cooked white rice
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup salsa
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups cooked and shredded chicken
- 1/2 cup shredded Mexican cheese blend
- 4 flour tortillas (10-inch)
Instructions
Preheat oven to 375°F. In a large bowl, combine cooked rice, black beans, salsa, cumin, garlic powder and onion powder. Stir well. In a separate bowl, combine chicken and cheese. Place 1/4 of the chicken and cheese mixture in the center of each tortilla. Top with 1/4 of the rice mixture. Fold sides of tortilla over the filling and roll up. Place burritos in a greased 9x13-inch baking dish. Bake for 20 minutes, or until heated through. Serve immediately.
